A question came up on the Fanconi list - does anyone know of a suitable marinade for making chicken jerky in the dehydrator? The standard recipes call for soy sauce or liquid smoke, which we thought might not be good for dogs…

Does it have to be marinated? If so an italian style dressing maybe?

I don't know; I've never made chicken jerky - have made beef and you marinate that, but it's tougher than chicken, so maybe that's why? Someone suggested trying low/no sodium chicken broth with some herbs for flavor. My furkids will eat almost anything, but they're not very good at telling what's good for them! They like tree bark, their dog-loos and hammocks, and bugs, none of which would make a healthy marinade, hee-hee.

Here is what my friend does…
Turkey, beef or Chicken Jerky
Ingredient1 pound turkey meat, sliced thin
3 tbsp soy sauce
1/3 cup Worcestershire sauce
Instructions
Mix all ingredients together in a marinade dish. Mix together and add strips of turkey, chicken or beef into marinade. Marinate for 8-24 hours in the fridge, depending upon how often you shake mixture and how flavorful you want it.Take strips out of marinade and lightly dampen with towel to dry off excess liquid. Place in dehydrator or on sheets for oven. Dehydrate till jerky is tough/crisp. Time varies based on method of dehydration so use your best judgement (12-36 hours).

Pat: I'm assuming your friend uses this for her dogs? Although it sounds just fine for humans–but wanted to check see. Any experience giving this to Bs?

Yes, for her dogs… (and humans too)... I have given it to my dogs.... and at shows it makes great bait for the show ring

Yes, but you could use low sodium Soy Sauce if you are concerned about too much salt

Pat-I tried the recipe-my husband came home and ate the whole thing! Then I told him it was actually for the dogs-man, was he mad that it wasn't for him! He said it was really, really good. On a side note-the dogs absolutely LOVE it.
I used the lite soy sauce.

A friend just told me about Bragg's Liquid Aminos for marinating your homemade jerky in. It has no salt added, and very low naturally occurring sodium.
